A real biryani is layered and sealed, then baked in its own steam so the grain stays separate and the meat cooks in its own marinade. Done at catering volume this needs a kitchen that can commit a pot and an oven to it, which is exactly why so much catered biryani is the stirred shortcut.
We match the event to a kitchen that cooks it properly, including regional styles — Hyderabadi, Lucknowi, Kolkata with the potato — rather than one house version relabelled.
How much biryani for how many guests
As the hero of a simpler menu, plan roughly one full tray per twelve to fifteen guests, plus raita and salan. As one dish inside a full buffet, half that. Always add a vegetable biryani alongside a meat one: it is not a courtesy, it is the dish half the room will eat.
Bone-in goat is the deepest flavour and the slowest; chicken is the reliable centre; egg and vegetable biryani carry a vegetarian table on their own. For mixed events we keep the vegetarian biryani on a separate line and serve it first.

How much biryani do I need for 100 guests?
Around seven to eight full trays if biryani is the centre of the meal, or three to four if it sits inside a wider buffet. We size it exactly once we know the rest of the menu.

Yes, and we recommend it. They are cooked and served separately, with the vegetarian line served first where the family prefers that.
