Space, and what it lets you do
Hillsborough properties tend to have the one thing catering wants most: room. That makes outdoor events genuinely practical — marquees, garden receptions, live counters set up outside rather than squeezed into a kitchen doorway — for most of the year.
It also means longer setup. We plan power, shelter and the walk from the van to the buffet in advance, because on a large property those three decide whether hot food is still hot when it reaches the table.
The Somerset County event calendar
Poojas and havans, Navratri and Diwali gatherings, graduations from the local high school, engagements and weddings, and the summer garden parties that run from afternoon into evening. Guest counts here skew larger than in the denser towns nearby.
For anything over a hundred we bring a named captain, servers, chafing and a cleanup plan, so the hosts spend the evening with their guests.
Menus across the county
Somerset’s Indian community is broad — Gujarati, Punjabi, South Indian, Bengali and Marathi families all hold events here — and we match the kitchen to the occasion rather than serving one house menu to everyone.
Vegetarian, Jain, satvik and no-onion-no-garlic menus are planned from the start. Mixed events get separate lines and separate equipment.
