Party formats that work here
For twenty-five to a hundred guests, an appetizer round, two or three entrées, a biryani, breads and one dessert is the format that almost never fails. Past a hundred, add a live counter — a tandoor turning out kebabs, or a chaat station — because it changes a buffet into an event.
For an office lunch, individual boxes beat trays: they stack, they travel, and they can be eaten at a desk between meetings. Trays are better when there is a room and an hour.
Vegetarian first, without apology
