Boxed lunches when people are eating at their desks: they stack, they are labelled, they do not need a server, and nobody queues. Trays when there is a room and a full hour, because a buffet eats better and costs less per head.
Whichever you choose, labels matter more than presentation at an office. Every box and every tray is marked vegetarian, vegan, Jain, contains nuts and heat level, because the alternative is somebody asking a colleague and guessing.
Menus that survive the journey
Gravies travel well — a chafing dish is close to the pot they left. Tandoor items are best within the hour, so breads go in last and kebabs ride on top. Fried food is honest about its window: chaat and pakora belong on a live counter, not in a closed tray.
Plan one vegetarian entrée for every meat one along this corridor; vegetarian demand here is consistently higher than the headcount suggests. A biryani plus one gravy plus breads plus salad and dessert covers almost any office.

Recurring lunches are welcome and get easier: once we know the floor, the timing and the dietary split, a weekly order takes one message.
